- You need 1 tbsp of heaped, sunflower spread / butter.
- It's 1 small of onion, finely chopped.
- You need 4 clove of garlic, finely chopped.
- You need 175 grams of dry quinoa, rinsed.
- It's 450 ml of hot vegetable stock.
- It's 1 small of handful flat-leaf parsley, finely chopped.
- Prepare 1/2 tsp of thyme leaves.
- You need 1 of black pepper to taste.
- You need 1 of squeeze of lemon juice.

- Melt the spread in a saucepan and gently fry the onion, garlic and quinoa until lightly browned, around 5 minutes.
- Add the stock and bring to the boil. Cover and let simmer for 15 minutes or until the quinoa has absorbed all of the stock.
- Toss through the chopped parsley and thyme.
- Season to taste with pepper and serve with a squeeze of lemon juice or a lemon wedge.
- Goes great with chicken, fish or a simple salad with crusty bread.
