  2. It's 1 small of onion, finely chopped.
  3. You need 4 clove of garlic, finely chopped.
  4. You need 175 grams of dry quinoa, rinsed.
  5. It's 450 ml of hot vegetable stock.
  6. It's 1 small of handful flat-leaf parsley, finely chopped.
  7. Prepare 1/2 tsp of thyme leaves.
  8. You need 1 of black pepper to taste.
  9. You need 1 of squeeze of lemon juice.

  1. Melt the spread in a saucepan and gently fry the onion, garlic and quinoa until lightly browned, around 5 minutes.
  2. Add the stock and bring to the boil. Cover and let simmer for 15 minutes or until the quinoa has absorbed all of the stock.
  3. Toss through the chopped parsley and thyme.
  4. Season to taste with pepper and serve with a squeeze of lemon juice or a lemon wedge.
