Ingredients of Chinese Rice
- It's 4 cups of cooked rice.
- You need 3 of large eggs (lightly beaten).
- Prepare 2 of carrots (peeled and diced).
- Prepare 1 of medium sized onion (chopped).
- Prepare 2 cloves of garlic (minced).
- It's 3 tbsp of vegetable oil.
- Prepare 2 of spring onions (thinly sliced).
- Prepare 3 tbsp of soy sauce.
- You need of Salt (to taste).
- It's 1 tbsp of grated ginger.
- Prepare 1 cup of frozen peas.
- You need 1 tsp of freshly ground black pepper.
- Prepare 3 of medium sized capsicum (diced).
Chinese Rice instructions
- In a large skillet over medium heat, heat 1tbsp vegetable oil •Add eggs & let sit for few seconds before lightly scrambling and folding the eggs over itself •Remove from skillet and set aside.
- In the same skillet, heat remaining vegetable oil and add onion & carrots •Cook for 5mins stirring occasionally •Stir in ginger, garlic, black pepper, peas & spring onions and cook for 1-2mins.
- Add rice and stir in soy sauce, salt & capsicum •Toss to combine and fold in scrambled eggs.
- Serve with shredded beef sauce!.
